Sausage and Sweet Potato Hash (Made with Turkey)

This is one of my favorite dishes to make.  SUPER Easy and although it sounds like a weird combination, it's delicious!  Trust me.

I whipped some up today so I'd have a few meals to take with me to work. It's a great make and take meal.  It's good warm or cold, by itself or add some scrambled eggs.












Part 1
3 lbs of sweet potatos
2 teas garlic powder or minced garlic
1 teas onion powder
1 teas chili powder
1 teas salt
1 teas pepper
4 tablespoon butter or coconut oil

Clean pototaos and peal.  Shred them.  This is what I perfer. They cook better.  But you can also chop them into little pieces, but make them little and even size.  Sprinkle them with the seasoning and dot with coconut oil, mix well so everything is evenly distributed.  Spread onto a cookie sheet and Bake at 425 degrees for about 30 minutes.  This time varies depending on how you shred or chop the potatoes. Stir at least once during the cooking.

While this is cooking, prepare the sausage (aka Turkey)

Part 2
1 lb of ground turkey
1 teas sage
1 teas onion powder
1 teas salt
1 teas pepper
pinch of ground ginger

Start cooking the turkey, breaking it up as it cooks, add the seasoning and brown until completely cooked and crumbled.

When the potatos are done cooking, combine with the turkey.  ENJOY.    Sometimes I'll make scrambled or fried eggs and serve overtop with a veggie side!!!

 This batch I used less potato then it called for and it's still good!!!
